Savory Beef Special

3 pounds lean ground beef
1/2 cup onion, chopped
1 tsp garlic, minced
1/4 cup water
3 T olive oil
1 can (28 oz) tomatoes, diced
2 medium cooking apples, chopped
1/2 cup raisins (optional)
1/2 cup sliced black or stuffed olives
1 T chili powder
2 tsp salt
1 C (4 oz) slivered almonds (optional)

Directions: In a Dutch oven or large frying pan, heat oil, add onions and garlic; saute for 20 minutes. Add ground beef, half at a time, saute until browned. Add tomatoes, apples, raisins, olives, chili powder, salt and water. Heat to boiling point, then reduce heat and simmer uncovered for 2 minutes, stirring occasionally. If adding almonds, stir into mixture just before serving. This dish is excellent served with tacos, over rice or used as a filling for sandwiches or in making Quesadillas. Yields approx. 2 qts.

Tasty Quesadillas

1 1/2 cups beef
1/2 cup cheddar or monterey jack cheese, finely shredded
4 (10 inch) flour tortillas
1/4 cup chpped cilantro

Directions: Preheat quesadilla maker or heavy nonstick skillet. Sprinkle half of cheese on two of the tortillas. Divide and evenly spread the beef mixture over the cheese. Sprinkle evenly with cliantro and the remaining cheese. Cover with the remaining tortillas. Place on heated quesadilla maker, one at a time. Close the lid and cook for 3 to 5 minutes or until tortilla is lightly browned. Slide onto cutting board and cut into triangles. Serve with sour cream. Makes 2 quesadillas, 12 pieces.
